Can I change the app name AFTER I already published it (and have users)?
Do I only need to change the app name in Adalo and publish it?

You would need to republish to change the name.
do you mean (a) that I need to create a new app or that (b) I publish an update build to my existing app`?
I believe all you need to do is publish an update to the existing app.
