I am wondering how to make a list display only the most recent form submission, without updating/writing over the previously entered information? I need the previous entries to remain in the database, so I cannot use the update function Any help is much appreciated!

To show only the most recent form entry in a list (while keeping all previous entries in the database):
The native way:
Your form creates new records in the collection (standard Create action, no update, so previous entries stay untouched).
On the list screen, connect the list to the collection.
Sort the list by Created Date (or a date & time property) => Descending (Newest to Oldest).
Limit the list to 1 item as maximum (in the list configuration).
This displays only the newest entry, and all old ones remain in the database.
If you have multiple users or need (per-user) newest, add a filter: Created By = Logged In User (or relationship to user).
