Hi, I’m really confused about how the paid Adalo subscription works. If I only pay for one month, can my app still be on the app store after the month is up?

It is a bit confusing in that sense because Adalo isn’t designed for that! Adalo is designed that you pay for a subscription and continue paying while your using your app.
However, you theoretically could pay for a month, post the app, stop paying and yes the app would still be in the app stores. You would be subjected to Adalo’s free tier for storage and other requirements. You also cannot ship updates to the app.
