Not sure how allowed this is but I’m having the same issue as this guy, does anyone have a solution? I can’t see the add / remove users part when trying to update a collection?!

It’s because it’s a One to Many relationship. If you create a Many to Many relationship you should get the option for add and remove user but that current data should be in that screen. If that data isn’t there you can make the button a list connected to the teams collection and add the update action to the button.
