I just answered this question in another thread that uses a simple true/false parameter:

This is doable with a true/false parameter on the user collection. Call it “onboarding complete” When a user first signs up, walk them through your onboarding screens where you ask the questions. On the last onboarding screen, update the logged-in user to mark the onboarding complete parameter as “true”.
